Job description

The Wave, Bristol, are recruiting Chef Managers to join us for our busy 2024 season. We have a number of fixed-term contracts available.

The Wave is a slice of the ocean inland, where people of all ages, backgrounds and abilities can experience the joy of surfing and its many physical and mental health benefits!

Our F&B area can seat 300+ visitors (inside and out) and is a high-volume operation. We feed and water super hungry surfers, our guests staying at The Camp – a 25 safari tent set up introduced in 2021, and spectators who come to hang out in our amazing venue.

As a Chef Manager at The Wave you will assist in the running of a successful & growing business that delivers fantastic food, an amazing customer experience, brings the numbers in & is always safe, secure & legal. Working with the F&B Manager you will achieve this by helping to lead an amazing team, engaging, developing & empowering them to ensure we provide the best experience and product to our visitors each and every time.

Our Chef Managers: ● Lead the kitchen team and work harmoniously with the F&B management team in all kitchen management duties, acting as the lead figure within the department ● Regularly lead service ● Ensure people are in the right place to ensure the kitchen runs efficiently & customers receive a constantly high-quality product ● Have a full understanding of each of the kitchen sections including being able to run the pass at peak times and knowing food prep SOP ● Ensure production levels are in line with the sales mix

forecast, meaning we have full menu availability at all times ● Be an advocate for change and Implement new menu items, processes and changes to procedure to the kitchen mechanics in a positive way ● Responsible for collating all mis en please from the kitchen sections and pop-up kitchens ● Work as part of the F&B management team to improve performance fairly through the provision of open and honest feedback, this could include holding record of informal discussions and other people management tasks ● Able to educate the team in our food ethos and full menu offerings, this includes breakfast, clubhouse and pop-up menus ● Train and develop the wider team by proactively seeking skills gaps within the KA, Line Chef and Chef Team Leader population. Ensuring the relevant checklists are completed ● Champion the highest levels of food safety and hygiene, working with the chef management and the wider team to ensure this is always top priority
