Smyth & Co are delighted to be partnering with a prestigious luxury hospitality group to recruit an exceptional Sommelier for two stunning properties — one in the UK and one in the Caribbean, split across the year..

This is a rare opportunities to join a refined, high-end restaurant environment within internationally recognised luxury hotels, offering an ambitious wine professional the chance to operate at the very highest level, whether in the heart of the UK dining scene or in an iconic Caribbean setting.

The Role

You will:

• Curate and manage an exceptional, globally sourced wine list
• Deliver elevated wine service aligned with ultra-luxury standards
• Drive revenue through intelligent pairing and upselling strategies
• Work collaboratively with the Executive Chef and senior leadership
• Train and mentor front-of-house teams in wine knowledge and service

The Ideal Candidate

• Proven experience as Sommelier in Michelin-starred or 5-star luxury hotels
• WSET Level 3 minimum (Diploma or equivalent preferred)
• Strong commercial awareness with a passion for guest engagement
• Polished, confident and service-driven
• For the Caribbean role: willingness to relocate
