Job Description
The role of Indian Specialist Cuisine Chef supports the Executive Chef Team and has primary responsibility for overseeing and supervising the preparation and production of authentic Indian cuisine for DO & CO. You will work hard to promote the company's culture, mission, and values while ensuring the highest standards of quality, presentation, and consistency are maintained. You will act as a team leader and motivator, using strong interpersonal and communication skills to supervise, train, evaluate, coach, and support the kitchen team while ensuring compliance with company standards, food safety regulations, and operational procedures.

Working closely with the Executive Chef Team to ensure consistent, high‐quality Indian cuisine is produced in line with all DO & CO standards while supporting menu development and presentation

Preparing and overseeing a variety of Indian dishes including curries, tandoori items, rice dishes, breads, sauces, and regional specialties with authenticity and attention to detail

Managing and supporting the kitchen team daily to ensure smooth operations, efficient production, and timely food dispatch

Leading the team in the absence of the Head Chef with a hands‐on approach while motivating staff to perform effectively in a fast‐paced environment

Planning production schedules while maintaining exceptional quality, operational efficiency, and compliance with Quality Assurance standards

Ensuring recipes, portioning, flavour profiles, and presentation standards are consistently maintained while controlling food costs and minimising wastage

Monitoring the preparation and handling of spices, marinades, sauces, and specialty ingredients to maintain freshness and authenticity

Ensuring all kitchen operations comply with SOPs, Health & Safety, Food Safety, HACCP, and all legal requirements

Performing regular quality control checks on raw materials and finished products to ensure specifications are met

Building strong working relationships across departments while supporting a positive team culture and continuous improvement initiatives

Supporting team development through coaching, training, and mentoring opportunities

Assisting with stock control, reporting, and overall kitchen cost management

Qualifications

Previous experience in a similar role within Indian cuisine or a high‐end fresh food, fine dining, luxury hospitality, or catering environment

Strong knowledge of authentic Indian cooking techniques, regional cuisines, spices, curry preparation, tandoori cooking, and traditional bread making

Strong understanding of food safety, kitchen hygiene, HACCP procedures, and allergen awareness

Ability to create, adapt, and scale recipes while maintaining quality, consistency, presentation, and budget expectations

Excellent leadership and team management skills with the ability to motivate, train, and support kitchen teams

Strong organisational and problem‐solving skills with the ability to work efficiently in a fast‐paced environment and meet tight deadlines

Good understanding of food cost control, stock management, and kitchen operations

Excellent communication skills with a flexible, hands‐on, and professional approach

Passion for high‐quality Indian cuisine and delivering exceptional customer experiences with attention to detail and presentation standards
